The secret to flavorful complexity is often hidden in the wood. At Old St. Croix, barrel aging isn’t just a technical necessity—it’s a craft. A tradition passed down through generations and still the heartbeat of every blend we create. Especially in XO Legacy—a new blend rooted in the historic Old St. Croix Dark Rum, created as a tribute to the original brand launched by Albert Heinrich Riise over 150 years ago.

What does barrel aging really mean for flavor?
Wood shapes time—and taste
When spirits are aged in oak barrels, something magical happens over time. The wood’s porous nature allows slow oxidation, which softens the alcohol and brings depth and complexity. At the same time, whatever was once in the cask—sherry, port, or bourbon—imparts rich notes of dried fruit, spice, vanilla, caramel, and nuts.

At Old St. Croix, our Master Distiller works with carefully selected barrels from renowned distilleries in the West Indies and Central America. Some casks are charred or toasted, unlocking natural sugars and amplifying character. Others have held dessert wines or bourbon, leaving behind smooth and aromatic layers.

Different barrels, different personalities

  • PX and Oloroso sherry casks add sweetness, roundness, and notes of raisins, dates, and toffee

  • Bourbon barrels, typically used just once, contribute vanilla, coconut, and toasted wood

  • Port and dessert wine casks deliver elegance and a mellow, fruity sweetness


It’s the combination of these unique casks that defines the silky, well-rounded richness of the XO Reserve series—and the reason XO Legacy is its crown jewel.

What does XO mean?

“XO” stands for “Extra Old,” and in the world of spirits, that usually means casks aged at least six years—often longer. At Old St. Croix, we select only the most mature and character-rich barrels for our XO series. The result is depth, warmth, and a long, luxurious finish—perfect for slow sipping with good company.

“Barrel aging is one of the most important factors in shaping the final expression of our blends,” explains Jonas Nilsson, International Marketing and Brand Manager at Old St. Croix. “It gives our blends their signature depth and complexity—those little touches that separate a good spirit from a great one.”

Not technically rum—but close to the soul of it

Though the legacy is clear, XO Reserve Legacy is officially classified as a Premium Spirit Drink. According to EU regulations, the word “rum” cannot be used if sugar content exceeds 20 grams per liter—and at Old St. Croix, taste and balance take precedence over labels.

With the name change from A.H. Riise to Old St. Croix, we’re taking one step back – to take two steps forward. With the new name, we’re reviving the original vision that inspired Albert Heinrich Riise more than 150 years ago, when he made Danish West Indian rum known far beyond the shores of the islands.
